Easy Breakfast Skillet

Prep time: 10 minutes
Cook time: 20 minutes
Serves: 6
Ingredients:
2 Cups Frozen Potatoes
1/2 Green Bell Pepper diced
1/2 Yellow Onion diced
1/2 Tube Sausage crumbled
1 Cup Shredded Cheese
6 Large Eggs
Salt
Pepper

In a small skillet, brown sausage per package instructions. While sausage is cooking, prepare frozen diced potatoes per instructions on package in large skillet. Add peppers and onions to potatoes during the last 5 minutes of cooking. After sausage and potatoes are browned, add sausage to the potatoes. Prepare eggs as desired in small skillet. Add scrambled eggs to the potato and sausage mixture or top the mixture with a fried egg after plated. Top with cheese. Serve.
Breakfast Burritos

Prep time: 10 minutes
Cook time: 15 minutes
Serves: 6
Ingredients:
6 Burrito Tortillas
6 Large Eggs
1/4 Cup Milk
1/2 Lb Sausage crumbled
1/2 Green Bell Pepper diced
1/2 Yellow Onion diced
1/2 Cup Salsa
1 Cup Shredded Mexican Blend Cheese
Sliced Jalapenos(Optional)
2 Sliced Avocados(Optional)

In a large skillet, brown sausage per the package instructions. While sausage is cooking, saute peppers and onions in a small skillet. After the sausage is browned, remove from skillet and set aside. Whisk eggs and milk together in a mixing bowl. Scramble eggs in the large skillet(be sure to carefully wipe away the sausage grease first). Place tortillas on a microwave safe plate and cover with a damp paper towel then heat in microwave for 20 seconds.
Layer tortillas with sausage, eggs, cheese, peppers/onions, salsa, jalapenos, and avocados as desired. Wrap and enjoy!!
Harbor Tacos

Prep time: 20 minutes
Cook time: 5 minutes
Serves: 6
Ingredients:
6 Taco Tortillas
1 Lb Shrimp
2 Tbsp Cajun Seasoning
1 Tbsp Olive Oil
2 Cups Purple Cabbage sliced
1/2 Red Onion diced
2 Avocados sliced
1 Cup Queso Fresco or Cotija Cheese crumbled
1/2 Cup Fresh Cilantro chopped
1/3 Cup Sour Cream
1/3 Cup Mayonnaise
2 Limes
3/4 Tsp Garlic Powder
3/4 Tsp Sriracha Sauce​ or Peri Peri Sauce

In a medium bowl, coat thawed shrimp with Cajun seasoning. On medium heat, add olive oil to a large skillet. Add shrimp in a single layer. Saute for 1-2 minutes per side. Set aside when shrimp are pink on both sides. For the taco sauce, in a small bowl, combine sour cream, mayonnaise, lime juice from 2 lime, garlic powder and Sriracha sauce. Can be made ahead for better flavor!

Fill taco shells with shrimp, cabbage, onions, avacado, cilantro, cheese, and top with taco sauce.

Sausage, Beans & Rice

Prep time: 15 minutes
Cook time: 15 minutes
Serves: 4
Ingredients:
1 Lb Polska Kielbasa or Smoked Sausage
1 Red Bell Pepper chopped
1 Yellow Bell Pepper chopped
1 Yellow Onion chopped
1 Pkg Red Beans and Rice
2 Tbsp Olive Oil

Cut sausage into 1" slices. In a large skillet, heat olive oil over medium heat. Add sausage and cook for 5 mins. Flip sausage over and add peppers and onions. While the sausage is cooking, in a large sauce pan, cook the beans and rice per package instructions. After rice is cooked and sausage is browned, add the rice into the skillet and stir over low heat. Mix well. Remove from heat and serve.
Tuscan Chicken in Cream Sauce

Prep time: 5 minutes
Cook time: 25 minutes
Serves: 6
Ingredients:
4 Boneless/skinless Chicken Breasts (about 2 pounds)
3/4 Tsp Salt
1/4 Tsp Black Pepper
1/2 Tsp Italian seasoning
2 Tbsp Olive Oil
2 Tbsp Butter
2 Tbsp Garlic, finely minced
1 Cup Heavy Cream
1/2 Cup chicken broth
1 Tbsp Tomato Paste
1/4 Cup Parmesan cheese, freshly grated
3 Cups baby spinach
1/2 Cup sun-dried tomatoes​

Cut the chicken into 1-2" cubes. Season the chicken with salt, pepper, and Italian seasoning. In a large skillet, heat oil over medium-high heat, about 1-2 minutes. Add chicken and sear until golden brown, 6-8 minutes per side. Set aside on a plate. In the same skillet, add butter and garlic and sauté for about 1 minute. Add heavy cream, chicken broth, tomato paste, and Parmesan cheese. Mix well until smooth and bring the sauce to a simmer over medium heat, about 3-4 minutes. Stir in spinach and sun-dried tomatoes and cook until the spinach has wilted, about 1 minute. Return the chicken to the skillet and spoon some sauce over to coat. Let the chicken simmer in the sauce until the sauce has thickened to a desired consistency, about 3-4 minutes. Season with salt to taste.
